Cabbage & Cashew Salad

Here’s an easy salad with just a few ingredients that has great flavor. My recipe is adapted from one I found here: Cabbage & Cashew Salad. I served this at a recent summer barbeque and everyone asked for the recipe. Here it is!

Cabbage & Cashew Salad

Cabbage & Cashew Salad
Serves 4

4c shredded cabbage
1/3c thinly sliced sweet onion (Vidalia or Walla Walla)
1/3c chopped Italian (flat-leaf) parsley
1T lemon juice
1T white wine vinegar
3T extra virgin olive oil
½t salt
1c toasted cashews

Place cabbage, onion, and parsley in salad bowl. In a small bowl, mix lemon juice and vinegar together, then slowly whisk in olive oil to emulsify. Whisk in salt. Toss salad with dressing and sprinkle with nuts. Serve immediately.
