Favorite Dry Rub for Steaks

This recipe comes from The America’s Test Kitchen Family Cookbook, and they nailed it! I haven’t changed a thing. I love it on beef. It would probably be good on pork as well, but too bold for chicken or fish. I used this on the New York Strip steaks for our Valentine’s Day dinner.

Perfect for grilled steaks!

Cocoa-Cumin-Allspice Rub
Enough for about 4 steaks

4t ground cumin
1T cocoa powder
1T freshly ground black pepper
2t ground allspice

Mix all ingredients together in a small bowl. Use about 1T per portion of meat, and rub on just before grilling. May be stored in an airtight container for up to one month.
