Lemon-Tahini Dressing

This simple dressing has been one of my favorites for years. It’s easy and very versatile – I love drizzling it over steamed veggies. Try it on cauliflower: I promise you won’t be disappointed! Tahini is sesame seed butter, and should be available in the healthfood section of your grocery store. It can also be purchased at Middle Eastern grocery stores.

Simple Salad with Lemon-Tahini Dressing.


Lemon-Tahini Dressing

Makes 1½ cups

½c. tahini
½c. water
Juice of 1 lemon
1 garlic clove, crushed
2T extra virgin olive oil
1T soy sauce

Place all ingredients in a small bowl and whisk to blend. Refrigerate for at least 1 hour and then whisk again before serving. Taste and add more soy sauce if your tahini is unsalted. This will keep in the fridge for a couple weeks, but tends to thicken up so you may need to add more water.
