Quick & Easy Pizza Sauce

It’s been over a year since I shared my recipe for a Quick & Easy Sourdough Pizza crust, and I finally – FINALLY! – have an equally easy and delicious pizza sauce recipe to go with it. I wanted something that tastes great but doesn’t require cooking, so it can be easily whipped up on a busy weeknight. Who knew pizza sauce could be so hard? I tried several different tomato products and combinations of spices before settling on this recipe: it’s fairly thick from the tomato paste, has a depth of flavor provided by the fish sauce, and the spices give it just the right savory kick. I knew my sauce was good when one night my son asked me: “Did you make this pizza or buy it?” SUCCESS! I won’t say I’m never going to darken the door of Pizzicato again, but this is a great make-your-own version.

Quick & Easy Pizza Sauce
Makes enough for 2 small pizzas*

1 (6oz.) can tomato paste
½c water
1T extra virgin olive oil
2t fish sauce
1t oregano
½t garlic powder
¼t onion powder
Dash cayenne pepper

Whisk all ingredients together in a small bowl. Let stand 20-30 minutes to allow flavors to meld.

*My small family eats just one pizza for a meal, so the extra sauce goes into the freezer for next time.
