Stovetop Mac & Cheese

It’s Friday again so I thought I’d share another easy and delicious weeknight meal the whole family will love. Homemade macaroni and cheese is a quintessential comfort food, but making it from scratch – with boiling the pasta, whisking a white sauce, and baking in the oven – can be a bit of a chore, and leave you with lots of clean up. This simple version comes together in about 30 minutes, using a single pot, and you don’t even have to turn on the oven! Now, it’s not exactly the nutrient-dense traditional food I prefer to feed my family, but it’s waaaaay healthier than that stuff from the blue box and just as easy. If you use rice pasta this meal can be gluten free.

 

Don’t expect to have any leftovers!


Stovetop Mac & Cheese
Serves 6

1lb. macaroni
4T butter
1 (12oz.) can evaporated milk
1T Dijon mustard
½t garlic powder
3c. grated sharp cheddar cheese*
Salt & pepper, to taste

Boil macaroni according to package directions and drain. Place butter in pot over low heat to melt. Add warm macaroni back to pot and toss to coat with butter. Stir in evaporated milk, mustard, and garlic powder. Add cheese one handful at a time, stirring constantly to melt. Season with salt and pepper to taste. Enjoy!

*I used Kerrygold Dubliner Cheese – available at Costco.
